Zak The Baker: Plum Anise Sourdough Slathered with Goat Cheese

Zak The Baker’s plum anise sourdough, slathered with goat cheese

As a food writer, I’ve had the opportunity to interview some of Miami’s best cooks, bakers and industry insiders. Occasionally, I also have the chance to sit down with the city’s most passionate visionaries. The latter was my experience when I met Zak Stern of Zak The Baker, the artisan behind South Florida’s most delectable sourdough.

During our interview, Zak generously gifted me a loaf of his plum anise sourdough. I had already tried Zak’s bread before, but not this particular variety. He recommended slathering the plum anise with fresh goat cheese. I did just as I was instructed, and it was absolutely delicious.

I wrote about Zak for Short Order with Miami New Times. The piece marks Zak’s first interchange with a reporter, and I am so happy to be sharing the news about a genuine artisan rooted in Miami. Make sure to check out the video by Matt Degreff, a local videographer and photographer, on the second page of the piece.
